Today is my mother in law's birthday and I figured I would bake her some delicious cupcakes. Cupcakes are my favorite thing to bake and I have recently started to do some orders on occasion. With that being said I have been on the hunt for my favorite chocolate cake recipe. I tried this one today (making my own minor modifications) and loved it!
Chocolate Cupcakes with Peanut Butter Cream Cheese Frosting
Chocolate Cupcakes-
1/2 cup boiling water
2 TBSP brewed coffee
1/4 cup butter, softened
1/4 cup cocoa powder
1 1/2 cups cake flour (or take 2 TBSP flour out and add 2 TBSP cornstarch like I did)
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 egg, beaten
1/2 cup sour cream
1 tsp vanilla\
*optional- 3/4 cup chopped chocolate (I used callebaut milk chocolate)
Preheat oven to 350 degrees. Put cupcake liners in pan.
In mixing bowl add water, coffee, butter, and cocoa. Beat on low until smooth and all sugar is dissolved.
In another bowl mix flour (or mixture) sifted, salt, baking soda, and baking powder.
In a small bowl whisk egg, sour cream, and vanilla together until you get a smooth yogurt-like mixture.
Add 1/2 dry ingredients and combine. Add 1/2 the wet mixture and mix until smooth. Add remaining dry mixture, mix well, and finish with remaining wet mixture. Blend until smooth. Add chopped chocolate and mix until blended. Don't overmix.
Fill cupcake liners 2/3 full. They raise up quite nicely. Bake at 350 for about 20 minutes. My oven bakes a little hot so I only let them go about 18.
